Our commitment to researching sustainability is clear:
little fertilizer in our fields and crop rotation to allow the land to breathe, all with the aim of reaching 100% of the company’s energy production by sustainable sources by the end of 2023.
It takes nine months for durum wheat to ripen naturally, similarly our pasta is produced unrushed: a slow process protects all the wheat’s properties.
All the wheat that goes into making our pasta grows in the fields of Cuneo, an area with a strong agricultural tradition. For generations we have grown our passion for agriculture, wanting to express the value of our land through the production of a quality raw material, thus creating the secret to an excellent product.
The dough is bronze drawn, which guarantees porosity and the capacity to bind to the sauce.
The pasta is dried slowly and at very low temperatures, resulting in the nutrients of the pasta and the organoleptic qualities of the wheat being maintained.
